The vines grow on cooler sandy soils with loess and loam, which help keep good freshness in the wine. Spontaneous fermentation starts in separate vessels: the Irsai spends several days on the skins in tank, while the Furmint is partly fermented as whole bunches in 500 L barrels and amphora.
